Cauliflower is all the rage nowadays, but did you know that North Indian recipes have been using it for years? This healthy accompaniment to roti rolls, paratha, or even basmati rice makes for a complete meal.
Ingredients
- Fresh 3 cups of fresh cauliflower florets
- 2 tablespoon cooking oil
- ½ teaspoon cumin
- 1 teaspoon salt
- ½ teaspoon dry powder turmeric
- 1 teaspoon coriander powder
- ½ teaspoon fresh grated ginger
- ½ teaspoon fresh chopped cilantro
- ¼ teaspoon red chili powder
- ¼ teaspoon chopped fresh green hot pepper
- ½ teaspoon dry ginger powder
- ½ teaspoon garam masala
- 2 tablespoons of water
Process
- Rinse cauliflower florets in a colander and keep it to the side
- Heat the oil in a skillet
- Add cumin, chopped green hot pepper, and grated fresh ginger
- Quickly add cauliflower florets and lightly toss
- Add salt, turmeric, red chili powder, coriander powder, ginger powder, and water
- Mix it and lower the heat to low/medium setting
- Check periodically and stir
- When it is soft enough to your taste, turn off the heat
- Add garam masala and stir lightly
- Transfer it to a serving dish
- Garnish with chopped fresh cilantro
- Enjoy!
